식품 중에 존재하는 생리활성물질의 다양한 생리활성 (항산화, 항골다공증, 항비만 및 항암 활성)을 in vitro, cell 및 animal model을 사용하여 분석하고 관여하는 작용기전을 밝혀 건강기능식품개발에 활용하는 연구를 수행한다.
현재 진행 중인 연구는 다음과 같다.

1) 활성산소 (ROS)를 조절함으로써 파골세포 (osteoclast)의 분화를 억제시키는 항골다공증 소재 개발
2) 활성산소 (ROS)를 조절함으로써 지방세포(adipocyte)의 분화를 억제시키는 항비만 소재 개발
3) 시베리아 차가버섯 (Chaga mushroom) 항암 및 항골다공증 활성과 작용기전
