식품생리활성소재 실험실

식품 중에 존재하는 생리활성 소재의 스크리닝, 활성물질의 분리정제, 발효 및 생물전환을 통한 생리활성 소재의 효율적인 이용방법을 개발하여 특정 생리활성이 강화된 기능성 식품 개발에 대한 연구를 수행한다.

현재 진행중인 연구는 식물과 해양생물 소재로부터 대사성 질환에 유효한 항산화, 항비만, 항당뇨, 항균, 항암활성을 가지고 있는
1) 생리활성물질의 분리 및 정제
2) 물질의 효능(In-vitro, In-vivo) 및 분자수준의 기작 규명
3) 소재의 발효 및 생물전환을 통한 생리활성의 개선, 증강 연구를 수행하고 있다.
